OOTD Week 11/13-11/17

This week is brought to you by the color yellow.  I had an entire outfit picked out from a long time ago that I needed to wear, so that's really where the color came from.

I have to do a post on my weight loss progress because I am stuck.  I don't know what else to do to move from this plateau, but when I take my pics for the week, I see no change.  I have looked the same since June.  I have been the same weight for the last 5 months, and I cannot break this point.  I don't want to get detailed on this post...so enjoy all my yellows.


 




Food Prep Week 11/13

I was researching some food options so I could switch it up for the week and decided on baked potato soup.  This would be my first attempt at making a proper soup.  It didn't quite turn out as thin as I would have liked because I added cheese...but the flavor was amazing.

I found the soup online at PeasandCrayons.  She is cute, and so far I liked her blog.  Check her out!

I really try to cook my food in the crock pot, call me lazy, but I just find it easier to cook in a crock pot and set it and forget it, then I can work on the rest of my prepping.

In this soup we have 1 sweet onion, 3 celery, some minced garlic, 6 medium russet potatoes (peeled and cubed), half a stick of margarine, 4 cups of unsalted veggie stock, and my seasonings.  I just really threw in whatever seasoning wise. 

I think next time I will add more liquid if I have bigger potatoes and I will not add cheese until it is ready to serve, that should keep it from being so thick next time.

I don't have a final photo of everything cooked up and portioned, but it was tasty.  I had some rolls on the side from Sam's Club...that was truly the best part.

OOTD Week 11/6-11/10

I chose army green this week.  I have a nail polish that is so pretty and green so I based my choice from that.  The annoying part to me about these pics is that I look the same all the time.  I don't see any weight changes over the last month and I am not sure what I can do to break my plateau.  I am stuck at the same fluctuating 1-2 lbs every week.  I can't break 211.  It is frustrating for sure.  This next week I am going to stop IF and bring my lunch to work and see if that helps.  I don't know what else to change.  Maybe I need to kick out treats for the week and see what that does.  Or maybe go back to strict vegan, not vegetarian.  Anyway...enjoy my army green posts this week.

Food Prep Week 11/6

Happy early post...work is slow, so I said let me put this week's eats up now.

I am researching different meal ideas so I don't get bored.  So in my searching online, I found a BuzzFeed story that linked me to a decent site.  I like to use my crock pot as much as possible when I cooking, it is so much easier in my opinion.  As they say set it and forget it!  I found a slow cooker enchilada quinoa bowl.  Looked easy and delicious, so I said let's do it.

I tried to keep this vegan, but messed up and added cheese...I make this for myself and my cousin, who I keep vegetarian mostly, so I don't limit his cheese.

I used Tofutti cream cheese for the first time, so I am curious how it tastes.

Here are my step by step pics this week, I am trying to get better at taking step by step shots.
I started with light red kidney beans (rinsed) I rinse all my beans and corn even if it says no salt.
Then black beans, corn, diced tomatoes, green chili, the tofutti cream cheese, and red enchilada sauce (when I make my stacked enchiladas I use green sauce, but I didn't think that would taste right in this dish) and quinoa (dry and tossed in the crock pot).  I guessed on the amount of water to use, the recipe called for 1/2 cup of water but I had more quinoa than they did...so I basically double the water.  Seemed fine.  I seasoned the pot with my house seasoning, and some chili powder.  Nothing elaborate. I topped it off with a 3 cheese blend and voila...dinner looks amazing.

Halloween at WORK

This year we had a Halloween competition between the 3 departments.  So naturally, myself and my manager are gung-ho for a competition.  We decided to do a witches coven.  Which worked out great because we had the decorations from last year so a lot of the pieces were reusable and applied to our theme. 

Our pièce de résistance was the cauldron we made.  We did a lot of Pinterest items.  That app is the bomb for sure.  I wish I had taken some step by step photos of the cauldron, but the finished product was very good.  We had a refreshments table with some Halloween inspired foods and drinks.


Of course we won 1st place...it was a little annoying that we won by 1 vote considering I personally think our's was much better.  I also think it is wack that 2nd place gets a lunch as well.  What is the point of competing if there are two winners?!?!?!

OOTD Week 10/30-1/3

This week is the color pink.  I chose this color because it goes along with my work Halloween costume--which will also have a post to come.  I did add some Halloween special nails so that was fun.  Little witch hats...so I'm sure you can figure our costume theme.







Food Prep Week 10/30

This week he requested lentil pasta, so that's we are having this week.  This is from a website lemons and basil.  She has some pretty good recipes and I modified this to fit our needs.  I used a veggie rotini for both of us this time instead of zoodles for me.  And I put everything in the crock pot rather than blending up a sauce like she suggests.  This way seems to soak up the sauce more, so I made sure to give him an extra Ragu brand spaghetti sauce.  He is a big sauce eater, so I don't want to hear any crap about it being dry.  Which it is, so I will be grabbing an extra sauce as well.

I will say this is a very good low cal filling meal so it is worth every bite.

I also have cheesy garlic bread to go along with the pasta.  I know the bread is not vegan but it is vegetarian, so for that I will go with it.  I am a lot more lax in my vegan vs vegetarian eating and will allow for more vegetarian eats in my diet.  A little easier, and it is mostly the dairy part that I allow in food, versus the meat.  Still don't have that in my diet about 95% of the time.
