Food Prep Week 12/27-Pigs n a Blanket

This week, I wanted something simple since we only have 3 eating days and our end of the month lunch.

So we opted for pigs in a blanket.  Cheap and simple.  Obviously I have vegan dogs and vegan cheese.  While the girls have regular delicious hot dogs and cheddar cheese.  (I could eat hot dogs every day of my life, so I hope these vegan ones are a close second).  We also have tater tots and ketchup.  Simple.  But super high in calories for sure.  The crescents are no joke.


OOTD 12/19-12/23

This week I had my outfits picked out over the weekend.  I have been "shopping" in my closet and making use of old items that are now fitting differently.  However, we had business Mon-Wed and then casual for the rest of the year...I like how they make it seem like it is for so long, when in actuality it is for the 6 working days.





  

OOTD 12/12-12/16

This week is nothing special in terms of outfits.  We actually had casual Tues-Wed-Thurs and then back to business on Friday.  So I made sure to wear as many pants that I haven't worn in ages due to poor fit.  I would say it was a success.






Food Prep-Pasta with "meatballs" Week 12/18

This week, I had a taste for pasta. I also had some Gardein brand meatballs to add with it.  I am still prepping for non-vegan eaters so, they had regular meatballs.  But everything else was the same. Well, I lie...the cheese is also vegan for me, and regular mozz. blend for them.
I added spaghetti squash to mine, which I will never do again.  It is not a taste I enjoy and I had forgotten how much I dislike the taste.

For the veggies we have mushrooms, zucchini, tri-colored bell peppers and onion.

Kanye, Kanye, Kanye

Read the title in Sway's voice.

So I foolishly bought tickets to the Kanye show.  I knew full well that it could go one of two ways. He will perform and put on a great show, like Watch the Throne or he will go off on a tangent.

I'm sure you can guess which Kanye we got.

Truthfully, I don't have an issue with how Kanye rants and raves until he starts speaking recklessly. We all know full well that he did not wish Donald Trump to be our president. He likes to say stuff to get under people's skin.  And that comment was that.

More than anything I was disappointed in the Golden 1 Center.  This is a new center and the seats we had were tiny.  Much smaller than the space at Arco.  All the money it cost and that's the best we could get?  I was also saddened by the viewing of the show.  They waited until 15 minutes in before we were able to see anything on the big screens.  I have the video of Kanye ranting.  It was more manic than anything.  In my opinion he wasn't saying anything that really required such news.  He often goes off on tangents throughout tangents, which is what he did here.  He did make some interesting points, but mostly he was just talking about anything and everything that popped into his head.  Almost like, if the thought came up he said.  It didn't have to fit, he just blurted it out.

Oh well, I at least got some good pics of me and the center.  It was nice to experience.  And since I got my money back it was a free show (with the exception of parking and dinner).  Not really any more money than any other night out.

Salad Week 12/12

Last week someone ordered pizza and they left the salad in the kitchen for all to share.  The salad looked divine and I decided to make that for lunch.  It has been the best salad and exactly what I wanted.

This has red and orange bell peppers, carrots, red onion, mushrooms, tri color tomatoes, cucumber, spinach and red leaf lettuce.  I am currently using a dressing that is not vegan but I can't waste all my food.

I'm not going to bore you with a prep pic, and instead just a pic of the salad in the mason jar.  Delish!


OOTD 12/5-12/9

I was off again this Monday so no Monday outfit.  It was worth the day off that's for sure.

Spinach and lentil soup Week 12/5

This week begins a new life journey for me.  I have decided to go vegan.  I know, I know such a hippy!  What can I say, I am a borderline hippy in a lot of ways (I'm still very type A) but I want to do it mostly for my health.  In just my standard way of eating, when I don't eat a lot of dairy I feel better.  I already don't eat a lot of meat to begin with, so that part won't be hard.  This is our vegan lunch.  I wanted something simple and easy to make, but still full of flavor.  I hate kale, so I subbed spinach.  Kale is too bitter for my liking, even cooked.

Oh She Glows is the best app for quick vegan recipes.  I will discuss my vegan journey in another post.  For now, enjoy our lunch.




OOTD 11/28-12/2

This week was back to business.  Nothing fancy.  We did have casual for the last three days of the week.  So I got to wear my new shoes in pic 3 and 5. But I will say the first skirt I was wearing, is 2 sizes smaller than I normally wear...so big ups to me!





Breakfast Casserole Week 11/28

We didn't want to eat Thanksgiving left overs any more, so we opted for a breakfast casserole.  It was the freaking bomb.  This had potatoes, eggs, sausage, bacon cheese and we added Tapatio for extra spice.  This was a highlight of my day knowing this meal was waiting to be devoured.








OOTD 11/21-11/23

This was a nice short week.  We only had to dress business for one day.  The remaining two were casual.  I love when they allow casual.

I will say I think I like pretty fly in the top pic.  The color is horrific, but it is black and hunter green. Looking like a real professional here.
