BLTs

This week we were feeling sandwiches.  I took Monday off, to recover from my 1/2 marathon (which I might post about), and they were having a potluck on Monday.  We are also having a bday potluck on Friday, so we only need 3 lunches.  I am trying a new brand of bread as I prefer Sara Lee 45 calorie bread, but it is too thin for blts.  We have romaine, grape tomatoes (which I think will be too sweet for this), thick cut bacon which I baked for 20 mins, rather than fried in a pan, I hate getting popped with bacon.  We have one slice of Colby jack cheese and our trusty Ken's honey mustard. Nothing too fancy, I'm having my sandwiches with the last of the chips I bought in the multi pack, which are cheetos--the kind no one likes.


  



Graduation

I did it! I have officially completed my masters degree. It is cool to think about the accomplishment. I always knew this was something I wanted to do, I never thought it would take me nearly 10 years after my bachelors to complete. I always had a different plan in my head. I have learned that life doesn't go as planned all the time and to let it happen as it may. I am proud of my accomplishments and look forward to what this degree will land me in the near future. I'm definitely ready to start my actual career and stop messing around with these entry level jobs. But at the same time I like the ease of where I work.

I took some pics of me at graduation and my outfit. This skirt and top were out of my comfort zone because it was a bandage style. Meaning tight! But I think through my working out and eating habits it looked pretty good. Granted I was Kim style with two body cinchers on, but it's how I do for special occasions.

I have always wanted to decorate my cap and this is more than likely my last graduation with a flat cap. And what better decoration than a candy skull.

It was so damn hot while we waited, so I took a pic to show my mom how sweaty and pissed I was waiting to line up.  That was some utter bs and the school should have done better for us




And this is my veggie owl tray for my grad party.  That was a lot of fun and I'm happy everyone that said they were coming did.

Quick Chili

This week (9/26-9/29) we had chili. (9/30 was our end of the month lunch and they served lasagna and salad.  The salad was bomb, the lasagna was salty as heck). This isn't the kind of chili that most people think of. This is more like a Mexican dish. I don't like sauce and liquid in my soups/stews/chilis so I drain everything. It was tasty and filling.  In the chili I used, red onion, mushrooms, green bell pepper, diced tomatoes, ground turkey and the frozen chili brick by Johnsons.  I seasoned it with chili powder, poultry seasoning, garlic, white pepper and paprika. I don't use salt in my food anymore because I am dealing with ankle swelling from too much sodium. It was all topped with 4 cheese fiesta blend when it was time to eat. I like mine with cheezits, the girls had saltines since that is more what is served with a chili. Enjoy the pics.

This week was random outfit choices. I didn't put much effort into my weekly work outfits. Partially because we ended up having casual week from Tuesday to Friday and partially because I just graduated and had a busy weekend full of family time and no work preparations. Either way I was a bum. But enjoy.

OOTW Posts

I had taken some pics of my outfits over the last month, but didn't finish one of the previous weeks, but never fear, I have one week worth of goodies.  They are bathroom selfies in our mirror at work, cause it's a nice ass mirror.  There was an intentional color theme for the week as I always like to do.

Gray and Black.  I tried to do darker gray top with black bottoms.  What can I say, I'm a nerd like that.






Southwestern Salad

Are you noticing a theme with the food prepping.  These past two weeks have been salads or salad like.  This is the last salad for September, which is good becuase I am sick of salads.

I recreated the McDonald's Southwestern salad, with a different dressing. Southwestern dressing cannot be found apparently, as I went to 2 stores with no luck.  So instead I got my favorite El Torito Caesar Pepita.

Cobb Salads

This week 9/12-9/15 we had Cobb salads.  Which are simple to make, but the calories get high fast!
Sheesh as good as this one was it was outrageous for calorie count.

I took a lot of pics this time, so there is a basic step by step of all my ingredients and progress.
Romaine lettuce, deli turkey and ham, colby jack cheese, boiled egg, grape tomatoes, red onion, fresh chopped bacon, avocado and ranch dressing.
